do you have to plug in the headphone to a portable device?

Headset plugs into the portable phone device which charges in the cradle.

Does the unit plug into a phone jack? Or how does it operate without the phone cord.

This product consists of three parts: 
1 the stationary cradle which is the unit connected to the phone jack AND it is the battery charging unit, as well.
2 smaller boxy thing in the picture with the amber screen and the buttons, this clips to your waist band/belt and is good to about 45 feet.
3 The head phones which are connected to 2 with a pug.
Unit 1 and 2 are receiver-transmitter, good to about 45 feet, and magnetic fields can degrade the quality of transmission.

which one is Best suited / required for Tech Support, Customer Service, Sales/ Upselling? This S12 Corded Plantronics or the Cordless Model.

This works very well in our office.  We have 2.  We have an optical lab requiring employees to field questions from our offices and vendors all day long.  I would recommend this product for hands free operation.  Only issue is it will only answer one line at a time. You cannot put someone on hold and then use another line.

Has anyone hooked these up to a Cisco IP Phone 303?

I doubt it will. These are designed for analog POTS lines.
