Are the trays dishwasher safe?

Yes, as the photo shows they are made of metal and not coated with anything.

what material is the machine body made of? Plastic? Aluminum? Iron?

The top, both sides and the bottom are plastic. The back is steel.

What is the noise level? And stability of temperature while dehydrating? Thank you

The noise level is what I would call, very low. The temperature is digitally controlled . Once I set the temp, the digital readout does not vary once the temperature is reached. I have not actually placed a thermometer inside to check if it varies.
