Two-Stage SharpeningThe Rosewill RHKS-11001 Knife Sharpener features two-stage sharpening design: coarse sharpen (diamond wheel 360grit) stage to sharpen the blade (when your knife is very blunt), and fine hoing (ceramic 1000grit) stage to remove any burrs that result from the re-edging and rough honing process. Its unique diamond wheel is designed to sharpen all kind of stainless steel knives.

Complete one or both of the following steps depending on the bluntness of the blade. Step 1: Coarse Sharpen (diamond wheel 360grit): Use this only if your knife is very blunt. Using slight downward pressure, run the blade from its heel to its point through the slot. Repeat three times. Do this once every six months or as required. Step 2: Fine honing (ceramic 1000grit): Always finish off with this step to remove any burrs that result from the re-edging or honing process. Without using pressure, run the blade through the ceramic rods five times. You can also use this step on its own to maintain a sharp edge. It is recommended to do this approximately once a week. After using the knife sharpener, carefully wipe the knife blade with a damp cloth or rinse under running water and dry thoroughly. Caution: Do not use the knife sharpener to sharpen serrated blades or scissors. To avoid damaging the knife, please sharpen the knife slightly and DO NOT sharpen back and forth. Do not put the sharpener in the dishwasher or submerge in water. The ceramic rods may discolor. This is normal.
