Is there any difference between the XH81 and XH81V besides the cover on the front of the case?

The font cover is the main difference. The XH81 will accommodate additional COM ports, but that would only be needed in commercial/industrial installations.

I've had models with and without the front covers, and greatly prefer the model without. The flaps are a bit on the flimsy side and are pretty easily snapped off if you aren't mindful.

I would like do use dual display with 2 older monitors that have VGA inputs. What would be the best way to do that?

You will have to adapt the digital outs on the unit. Basically you'd need a HDMI to VGA adapter and a DisplayPort to VGA adapter.
