Question 1

Can I use any type of pan with this?  The one I have tried was not "recognized" by the Induction cooktop.

Induction burners work by inducing a magnetic field that generate a current in the pot which is all shorted so it heats up.

As such the pot must of a material that responds to the magnetic field, this would be ferrous metals such as iron, cast iron, steel, stainless steel. There are other materials that would work but pots are not made from them.

Cast iron pots and pans are inexpensive but are very heavy, so most people use stainless steel pots.

When shopping for pots carry a small magnet, if it doesn't stick to the bottom of the pot then they won't work,

Question 2

what size frying pan 8" or10" would be the largest you would use?

I use 8", 9.5" , and 12" skillets with no problems, the smallest pot I have used was a 6" sauce pan and it worked fine.

I love this unit, I bought two of them, and have not used the regular electric stove since I got them.

Question 3

So I can turn this unit on, and hit the lock button and it will stay on even if I remove the pan and put another one on?

You should not remove the pan while the power is on, it will get an error and you will have to turn it off.

That said I have several times with success switched pans but you need to do it quickly, more than about 5 seconds and the error will keep the unit from functioning until the unit is powered off.
