I recently got a new modem and realized it has no phone jacks, would this allow me to plug the phone into the ethernet port?

No this simply coverts a straight thru Ethernet cable to a crossover cable. It is Ethernet to Ethernet.

I want to connect two modems one is ethernet connection and the other phone connection can I use this adapter ?

This adaptor essentially converts your ethernet cable into a cross-over cable. This is necessary if you are attaching two similar network devices together with an ethernet cable as it crosses the transmit and receive connections. Most common use would be to connect a switch to another switch (or hub to hub). It could possibly work with a modem to modem connection if a straight ethernet cable doesn't work and you are connecting the  two by ethernet cable.
