Will this work on a macbook pro ? (2015 with mDP) ?

If you have the correct mst port. Ordered this thinking it was for a hdmi and it’s for mst port. Annoying and wasn’t well worded. Research before purchasing this.

does this support 3 monitors running at 4K each? I hear that the one that has 3 female display port plugs cannot do all three monitors at 4K at once.

Unfortunately no, one 4k @ 30Hz uses 43% of the maximum available bandwidth through this device. It does allow for two 4k monitors @ 30Hz connected once and depending on the graphics card you can also plug the 3rd monitor into a free HDMI slot or another MST hub.

Does this support 2560X1080?

Yes. The hub is not specific to any one monitor.
