Does this come with a processor?

No, it requires a separate purchase for the processor. Only specific models will work correctly so be sure to check out the specs.

does this barebone include the processor? Can you custimize and add options?

No and No. You will need to supply your own processor and RAM. The processor is also a bit tricky, you need to make sure you get one that draws less than 45 watts of power, not just match up the correct die. You can add a single 8 lane PCI-e card.

what available procs do you have for this system? do you have options for adding a proc and a hard drive before delivery? when will these be back in stock?

Always check the Supermicro site for the barebones before you buy your proc. According to that site, on this day, this case will take Intel® Xeon® processor E3-1200 & v2 series, Intel® 2nd Gen and 3rd Gen Core i3, Intel® Pentium® and Celeron processors. Pay careful attention to the version of the server proc. This won't take v1 or v3 and for some you have to flash the bios for v2. We didn't, but you may have to buy an i3, update the bios and then install the E3. Again, nothing will get you like the generation. When in doubt, call Supermicro. They have great tech support and are always glad to help.
