i'm new to NAS, do i need to buy the storage drives separately?

Yes, choose your disk size, make sure they are the same. If you plan on doing a raid disk array for redundancy across both disks, you will need to size each disk appropriately. use Synology's disk calculator search 'synology disk calculator'

Can the Synology 2-Bay be used with a Mac system?

I have 3 Synology NAS file servers, all used by PC computers. From general knowledge I know the Synology units don’t care what kind of computer connects to itself. In fact you can use Mac’s Time Machine to backup to Synology. Synology is platform independent.

"Up to 36TB of storage." So if I have 2 20TB drives, I can't access all 40TB, only 36?

According to the compatibility database for DS 223 this unit only supports up to 18TB hard drives at this time.  You can get 36TB of RAW storage by doing raid 0 of two 18TB drives, but that will only give you about 32TB of usable space.  I would NEVER recommend this configuration because if either drive failed you would lose EVERYTHING stored.  If you need 40TB of space, buy a DS418 and install 4 x 14TB drives in SHR1 raid configuration so you have single drive failure protection at least.
