Does this specific model have a loud humming sound for any of you owners using this?  Not to be confused with the Clicking sound, but instead of a passive humming sound?

no I do not hear a humming sound from my Lc2400. What type of load are you putting on it?
I use my LC2400 for my RV, when you go to a camp grounds sometime the park voltage is low an I just need to boost it up. but the one I have works fine no hum that I notice, when I use it again I will take a second look for a hum

Question 2

How do I know if I want the 1800, 2100, or 2400 model? I'm not looking to protect expensive electronics per se, but to prevent lights from flickering. Also, I thought there was only 1800w per most circuits anyways?

The rating is the power (Watts) that it can handle.  This will be the amount of WATTS that you will be "plugging" into the unit.  Power (W) = Current (I) * Voltage (V) - P =I*V.  Since the Voltage in most homes is 120V then you only need to find out the current (amps) that will be "pulled" from the devices your plugging in.  Look at the current rating on the fixture(s) your plugging in and total them up - This will give you the total current  needed.  If your fixtures are simple lamps (which may not have a label) then you take the Wattage from the bulb and run it through the above formula (ex. 100W Bulb = 120V * I .....Divide 100 by 120 to solve for I which = 0.833Amps).

As for your "maximum" load in a house - Most houses have 15Amp receptacles (NEMA 5-15).  So, run this through the P=IV formula which would be W = 15A *120V which solves to be 1800W.  If you buy the 2100W unit it could pull 17.5A and the 2400W unit could pull 20A.  If your receptacle is able to provide 20A then then it should have a NEMA 5-20 which looks a bit different (A 20A receptacle SHOULD be on its own circuit).

Why does it keep clicking when connected?

If I recall correctly, the clicking indicates it is actively conditioning the line.  If it's clicking all the time, you may want to check the quality of the circuit.

The only times mine clicked actively were during peak summer electricity demand times, when the local grid is taxed.
