Typically do laptops come with a 2.5" or other size hard drives?

Most laptops use a 2.5" HDD or SDD.
Though some now, and especially tablets / hybrids like a Microsoft Surface Book do not and use M.2. As far as I can tell M.2 and1.8", 2.5", and 3.5" should all work with this device as they should all plug into a SATA dock (keep in mind the actual adapter works outside the hard case provided).
The only drives this should not work for are PCI / PCI-e type drives or those that are DIMM modules meant to work on another board.

Question 2

Any power brick/supplementary power provided with case?

No, there is no supplementary power supply provided with the product, because the connect provides data and power to the drive. You can see in the pictures it has two connectors and the larger one is the power connector for a S-ATA drive.

Question 3

Will most any SSD get enough power to run inside this case?

Two factors to consider are: 1) The power of USB port that PC provided and 2) The power rated of SSD or SATA drives. My laptop's USB 3.0 has built in charging port (indicated little thunderbolt on the port itself) can provide up to 2.0A (max). I tested with SanDisk SSD 256GB rated 5VDC 1.6A (Amps), Micron SSD 256GB rated 5VDC 2A and also Samsung SATA 2TB rated 5VDC 0.85A (850mA) - All worked fine with Vantec CB-STU3-2PB adapter

Question 4

The description says "Adopt UASP".  Has anyone confirmed that this supports UASP, and also anyone done any performance testing on an SSD with this adapter?

Yes it's UASP supported as far as I know of 
I've done couple disk benchmark tested comparison between Vantec with ezDisk on SanDisk X300 256GB SSD, USB 3.0 HP ProBook 470 G1 Win10.14393 as results :

Hope that help - Good performance and I like the concept quick removable but the heat been trapped in plastic container is not a good idea, the HDD needs to cool down in long run. Not recommend for plugin 24x7
