What is the read and write speed?

I didn't directly measure them, but HD claims that it delivers sequential read speeds up to 1700MB/s and sequential write speeds up to 1450MB/s (500GB model).

Remember it only uses 2 PCI lanes.  Their SN550 model uses 4 lanes so will have a faster interface.  If you want even more speed, get one of their Black models.

I put one of these in an Intel NUC8  computer with an i-5 processor for my wife, who uses it mainly for web browsing, e-mail, and writing documents and it is plenty fast for that.

Does it come with, or do you have software, that will transfer all (and I do mean ALL) software, including the OS and applications (Office, games, etc.) from my current hard drive to this one.  Is it even bootable?

No - its a bare drive You can Download Linux mint with Libre office suite of you want those you mentioned.
