A reviewer said the wires are all white. I need to make several cables out of this, are the wires color coded like normal?

Recommend you buy the lengths you need, already finished.  To cut into an already finished,  shielded Cat 7 cable, and try to put your own ends on seems a waste of time and guaranteed to have lower performance.  The exterior jacket is white; internal wires - I suspect - have normal color coding.  If you must make your own, suggest you buy bulk cable and all of the proper terminations.  Cat 7 shielded cable is a larger diameter than Cat 6 and shielded terminations are a bit trickier.  Good luck.
