is the ac power supplied in a weather proof enclosure ?

The power supply does not have a weather proof enclosure. We have used outlet enclosures when necessary. What I have done is purchase outdoor rated network cable, installed the power supply inside a building and then run the outdoor cable to the device. In one instance, the power had to be placed on a post near a pool so we used outdoor outlet enclosures in that setup.

Does the AP include mounting hardware for mounting on a wall/ceiling/post, etc?

Yes, It has a back plate that you mount with screws and it has a round metal clap that you can use around a pole

what is the power source?

It comes with a 48V POE Injector. Or you can use a POE Switch so long as it will output 48V, the unit also has a second pass through port that is also POE for another access point or an IP Camera.

Question 4

Will this provide a true 600 feet? Has it been tested? My application is 500 ft poolside 100 feet (fitness center) 100  feet (clubhouse) ? Is the antennas omnidirectional?

If you mount it out side with line of site to the pool house it will work well with good security. I use these a lot. If you have any trouble, setup a second one at the pool house and they connect together to form one large network.
I wouldn't go that way. setting up 2 has a tendency to be hard to setup unless you have done it before. So if you want distance, I use a nanostation m, like a nsm2. It has amazing distance, good speed and you will only need 1. 
I love Ubiquiti. I use a lot of the AP outdoor+ but I have better luck with the nsm2. 
And yes it is omnidirectional.

Does anyone know if this is compatible with Ubiquiti's AP controller software?

Yes. I believe you'll need at least version 3.1, though 3.2.5 is the latest release, so that should be used..
