does this package include all thats necessary to add 2 monitors for a total of 3?

Only adds 1 monitor. You will have to buy 2 in order to have 3 monitors. Or: What we do is have one monitor hooked to the laptop via the vga cable, the laptop itself and the adaptor to make 3.

I am thinking about buying the MSI GS70 2OD-229US Laptop. I need to plug in a second monitor to work remotely while on a trip. Wondering if this device will do the trick? I am assuming most monitors now are DVI.

I use mine with a desktop, but I imagine it would work with a laptop as well. As far as the DVI issue - you could get a DVI to VGA adapter just in case.
