Looking for simple tablet to use to show artwork (like a portfolio) and not a lot of bells and whistles. Would you suggest this...? If so, why, if not, why not....and suggest another??

I think it would work well for your purpose if you are ok with the screen size. 
It's a full blown Windows computer (8 upgrade to 10) so you get all the bells associated with Windows, but you don't have to use them. 
I bought it to be a photo frame for my parents that I could admin remotely and Windows was better then Android for that.

The screen looks pretty and I was happy with it rendering photos. 
It only has 1 GB of RAM and 32 GB of memory so I wouldn't buy it for general computing, but for showing images it would be very easy to pull out and swipe through a portfolio. 
It does not have and HDMI port so you cannot use this with an external monitor for larger viewing. 
It can cast the screen so if you have a compatible TV that works great and is an option for viewing on some TVs.
