I have a system that uses two Adata XPG Z1 DDR4/2800MHz Dual Channel Memory sticks (8gb x2), on a Z170 mobo, this seems to have the exact same specs, would I be able to install a single of this card and work with the 8 x 3 setup?

In one way, you can't. That is, if your board runs the z170 spec, the third stick will not run on the same channel, since z170 is limited to 2 ram slots per memory channel. On the other hand, you can install and use the third stick (unless your mobo is cheap and doesn't support the full z170 spec), and there won't be any practical difference. It's like adding A. adding and extra lane going both ways on a four lane highway vs. B. adding a separate two lane road. You're adding the same lanes either way.
