Is there a spec for Input Lag anywhere? How well does it work for high-paced gaming?

I have not used the 3D on this projector (which is said to have some movement lag), but I have done a lot of gaming including battlefield and call of duty...I have not noticed lag.  On screen it say the refresh rate is 67 hertz with HDMI. Bluerays look amazing!

Does this have a zoom and if so is it electronic or manual?

It has a manual zoom and manual focus. Going from minimum zoom to maximum gives about 130% screen size compared to minimum.

Question 3

for a 105" screen (diagonal measurement) how far does the projector need to be away?  Or is there a place to calculate this?

Acer has a tool on their website that will give you a size range based on the distance from the screen. Search google for "acer p1500 projector calculator" and you should find it.

Does this projector work with standard/universal ceiling mounts? (It would be nice if there was a picture of the bottom of the projector.)

Searched for Model "Acer P1500(MR.JGQ11.00M)"  on Bing  found  "Acer | Professional and Education | P1500 | Datasheet"  listed the following 3.1"x10.4"x8.7"  (App.) 4.85 lb . Should be the same piece of equipment.
