Does this SSd tend to need an aftermarket heat sink? Or is the plate it comes with sufficient enough?

If you plan to use it with PS5 it is highly recommended to use a aftermarket headsink, I understand that the default one does not qualify for use on PS5. However, I could use it on a PC with good ventilation.

What is the DRAM cache capacity and SLC cache capacity based on 2 terabytes?

2048 MB DDR4-2666 CL19 for the 2TB model. 
SLC cache isn't applicable as the drive has a DRAM cache.

Yes it can. On the box it says what are the Reads and Write speeds for PC and PS5.

Go educate yourself on the difference between D-Ram (Random Access Memory) and an SSD (Solid State Disk) storage device. Your incoherent question is equivalent to asking: "I don't see a blue sky, when the grass is green. Whats the issue if there's no blue sky when compared to having green grass? or otherwise?" Your question makes no sense whatsoever... What's the issue with having big feet when compared to having small hands? or otherwise? What are you trying to ask?!

Not Internally. the MacBook Air uses proprietary SSD modules and are not designed to be user upgraded.  However, there ARE thunderbolt enclosures for m.2 devices that will allow you to use this as an external USB device if you wish.
