will these work in a RAID1 environment?

I'm not a tech but I wouldn't see why not. Once formatted and activated like any other hard drive to me. I would however format by some other means, in the format you plan to use, as in, on another PC or external drive bay etc. first. That way in your set up your system will see a partition available.

Does the new Adata SU650 upgrade my Su635 and come with an operating system. Asking for myself. ?

it may hold more gb that the su635 it does not have an operating system on it you will need to install your choice of OS

Does it have a DRAM cache?

Per their data sheet it only has standard SLC caching, paired with ECC error correction. You can find this on their site on a model by model basis.
