Can this card run 6 1080p displays? Just wanting to run it like an extended desktop.

I do not think so. However, I have not tried to connect more than four monitors per video card. I have used three of the W7100 cards on two computers. The largest computer has two cards and the monitors required adapter in-order to power the displays. The other computer has three 1080p monitors and the video card was able to support the three displays.

which crossfire cable/bridge do i need to connect two W7100's?

No bridge is required. Just plug in, install the latest driver, and enable crossfire in AMD settings.
