could this drive bay be set up in raid 1 and run connected to as NAS on a router, or does this drive need to work in conjunction with an OS to run a raid array?

It looks like any other single SATA drive.  The device connected to the SATA port doesn't know the difference. On a single drive failure it just keeps on going.

Question 2

If you are running a SAFE (Mirrored RAID Configuration) Can you use (2) 2TB hard drives?

Only if this drive bay supports RAID. But I would doubt it considering most RAID setups are controlled by south board chips and require direct SATA connection. Definitely not bootable.

If you mean RAID as just a way to backup this drive bay, again, does it have RAID capability?

Question 3

Is there any way to run 2 drives in here without RAID?  I just want to have two disks visible to me that I can use as two separate drives.  I can't figure for the life of me how to do it?  Oh, and I DO have a port-multiplier eSATA card in my server too.  So, how do I do this?

There is a dial on the back, set it to JBOD (just a bunch of disks). This is a non-raid mode. Hold the reset button down for about 5 seconds, then restart your computer. The computer should see both drives after that.
