Will this function with a 2018 Apple iMAC?

I use 2 of these to back up my entire home office - 2 computers, 3 screens, modem, router, switch, IP Phone, and it works flawlessly, I highly recommend. Should have no problems with your device.

Does the interface application work with Linux, specifically, Debian?

There is a package available for Debian called apcupsd that communicates with APC USB connected UPSes and manages system shutdowns. The PowerChute software from APC is available as an RPM from their website that you might be able to get working with alien to convert it under Debian but I'd recommend using apcupsd.

What is the watt-hour (Wh) rating of this UPS?

According to the APC website the rating is 102 VAh capacity 104 VAh runtime

Difference between BE850G2 and BE850M2?

This is a question for manufacturer. They look exactly the same. The difference might be in how audible alarm and when activates or some firmware improvements to the button control mechanism, perhaps even using new micro-controller chip inside. All to subtle for general description to mention. It does say M is the step up from G, so go with M when purchasing.
