Why don't the ports have thunderbolt?

It does have Thunderbolt 3 header on motherboard itself (only Maximus Extreme and WS Pro have it. In order to utilize it though you will need to buy separate add-on PCIe based card that installs into PCIe x4 slot and gets connected by special cable with this header. As an example Asus ThunderboltEX 3 card.

Will this ASUS ROG Maximus XI Extreme LGA 1151 motherboard fit in an HP Omen x case? I note on the Asus web site it is called a EATX form factor. Whats the difference between EATX and ATX?

e atx mobo stands for extended atx which is a bigger board than atx so look at case details make sure the case u buy is an e-atx computer case

When will there be a WiFi version?

It has WiFi and comes with an antenna.

If you were doing SLI with this, would you need a 3 slot or a 4 slot bridge?

A 2-way SLI would require a 3-way bridge or 2-way bridge that is long enough to get to the third PCI-E slot from the second. I think the distance between slots 2 and 3 is 60mm.
