Do you need a GPU with this?

No. All the 7000 Ryzen CPUs come with integrated graphics on board.

Does anyone know how to parse out the PCIE bifurcation chart for this board on the Asus website? I'm not sure what I'm reading and the manual was no help.

When M.2_3 (The bottom left one.) is occupied with an SSD device, PCIEX16_1 will run x8.
