Dual channel but only one slot for RAM and already soldered on board. That means you cannot change RAM for this laptop. Usually it comes with 8GB RAM. If you need 16 GB RAM, you should looking for 1TB SSD storage version.

You can't upgrade the ram on the vast majority of ultrabooks because it's soldered to the motherboard and this Zenbook is no exception to that.  You're generally going to look for something with a more traditional form-factor like some of the Vivobooks or more expensive, thinner gaming laptops like the Razor Blade (or something like that) in order to upgrade the RAM.  Upgradable RAM is absolutely not common when it comes to dealing with thin laptops that are under 3 lbs; more form factors that are between about 4-5lbs might have upgradable RAM.

Does the laptop have a separate sata hard drive bay in addition to the to the nvme drive?

No.  There simply isn't space for one.  This is a very thin, light-weight laptop -- that's the design aesthetic.  You really wouldn't want to open something like this up because most of the components like the RAM are going to be soldered to the HDD.  You could potentially swap out the NvMe drive for one with a higher capacity (eg; 3TB) but no, it doesn't have a sata HDD (It would add weight!).
