Sure it will. Just calculate your CPU TDP x 2 plus an average of all your devices. Ideally you wouldn't want to push the PSU above 80% of the rated power to ensure a long and healthy lifespan.

Hi would this work on a mini ITX desktop build and what is the dbA on these fans?

It should work but seems a bit of overkill at 800W.  Just be sure the connectors on your chosen motherboard are all available on the power supply. I run this Power supply 24/7 on a 16 cam security system.  After a few months it has become too noisy to sit around a work station.  Good Luck with your project.
