Yes it will. We used it on an iPhone 5s and now have a iPhone 6 and it works great. It will work with anything that uses a standard USB port for charging. We also have an Samsung S6 a Samsung tablet and an IPad Mini. All work just fine. Be sure to use the 2A ports for tablets. Phones vary on whether they need 1A or 2A to charge properly. Most will charge on the 1A ports.

Will it work to charge a Kindle Paperwhite? Kindle states that the maximum power charge is Input 5,25V – max 500mA. Would it be safe to use one of the three Universal ports to charge the Kindle?

It will work just fine to charge your KIndle. The ports on the charger are marked with the maximum current they will provide. Your Kindle requires 500mA and that is all it will draw. Any of the 5 ports will provide 500 mA. The ports do not push 1000mA or 2400 mA into your device. The device draws what it needs and no more. So you can safely use any of the ports to charge your Kindle. Some devices require 2000mA or more and you would need to use one of the two 2400mA ports to charge those devices. The 1000mA ports may get the job done eventually, but will take a long time to do it and could cause the charger to get very warm. I love the charger. I only wish all 5 ports were rated at 2400mA.

Is this compatible with iPod Touch 5G?

It has 3 (1 Amp) ports and 2 (2.5 Amp) ports, Compatibility shouldn't be a problem, the 2.5 amp port will charge much faster and is made for tablets or power hungry phones.

The Manual states that you can unplug the unit to reset the "smart charging" feature but to be honest with the 5 different devices we use I've never noticed a difference or problem to make me have to do that.

It only comes with the power cord to plug it in the wall that is 3.3 Feet

Purchase USB cables separately, newegg has anything you would need in USB cables

what makes this "Intelligent"? I'd like to assume it means it senses my phone is %100 and shuts off but I don't like to assume with my money.

The "Intelligence" really is just that the charger won't overcharge a device that can't handle the full capabilities of this power supply.  If you plug an iPhone 4 into the charger for a Samsung Galaxy S5, it will charge the iPhone WAY too quickly and potentially damage the battery.  This device throttles how fast the charge is delivered and won't burn up sensitive devices.  You can plug an iPod into one of the high-capacity chargers and you won't hurt the iPod.

Regardless of the device, once the device is fully charged, the power block will just maintain your device's full charge.  I have one of these that keeps 2 portable chargers fully charged, and powers my Android tablet.  I've also used it to charge two different navigation systems.  So far, I've had nothing but success with this charger.
