Will this work with Windows 8?

You can go to the Seagate website and download the application for your OS and you should have no issues.  It is not flawless streaming, but it should work the same on windows 8 - good luck

Does the ios app allow you to copy files from the iPad or iPhone to the drive, or can you only look at the files on the drive that were loaded from a computer? In other words, does the app provide a file system that allows you to write data as well as read it? Can I copy movies or pictures that are already on my iPad or iPhone to the drive over the wireless connection?

I use the device with my Android pad, and can both stream media files wirelessly from it (also "get" or "download" data files from it with a browser), as well as "put" files (send them to storage on the device) wirelessly.

I have "hacked" the unit (not the firmware) and replaced the hard-drive with a SSD (solid state device), which runs more efficiently and makes the battery last at least three times longer per charge.

I don't know anything about capabilities with Apple products from personal experience (never touch the stuff), but everything I've read (and know) suggests you can do the same things I have described above.

Uploading files to the device wirelessly is AGONIZINGLY SLOW-W-W-W-W-W compared to uploading them thru the direct/wired BLAZINGLY F-A-S-S-S-T  v.3.0 USB connection.

Does this product work with a Macbook Air?

Assuming the Mac can play the format you have your files stored in, I would think Safari could open them just the same as any other browser.  The brochure says Mac compatible.  On my HP Mini, I just connected its Wifi to it - then entered the gateway/address into Firefox - then clicked through the menus to the video I wanted to view.  Worked perfectly.
