Will the Cooler Master Seidon 120XL fit in this case?

Yep, plenty of room. Same cooler I'm running in mine now.

It says 5 Internal 3.5" or 2.5" Drive Bays. Where are the 2.5" bays? I'm assuming I'm supposed to convert a 3.5 into a 2.5 but how?

There is one place to mount 1 2.5" drive on the bottom of the case, below the 3.5 internal bays. The 2.5" drive is actually screwed to the bottom of the case. Frankly, I was disappointed, because I plan to use 2 solid state drives in my system. I bought a bay converter. They are not expensive, but I don't know how well the one I bought will work with the screw less mounting system. In fact, the explanation of the screw less mounting system is over brief, and it took me a while to figure it out. And it only works well with standard height drives.

how do i insert discs?

The whole front is a door and it opens to the side revealing your 5.25" drive bays for your disk drive. Also just to give you a little insight I don't really care for this case, after getting it I've noticed its cheaply built and flimsy and the internal layout is horrible. The corsair 230t is only a few more dollars and a much better case, I'd recommend it.
