We bought this extra memory because one of our users was using business related applications that ate up a lot of physical memory and this particular users was encountering severe page faults on her system where data in memory was constantly being paged out to disk in order to allow other data to be loaded into memory.  The addition of this memory did make a noticeable difference in the speed of these applications that were being used and it cut down on the page faults that were occurring.

The question you are asking is very application-dependent.  Do the games you play use up a lot of physical memory... do they make use of parallel processors in the computer... is it online gaming.  These kind of factors all play into the question of whether adding additional memory to your computer is going to be helpful.  One thing you can do to give you an idea about whether it would be helpful or not is to use a performance monitor to determine just how many page faults are occurring in your system as you are playing these games.  There may be better ways to determine this... I'm not claiming to be an IT expert or anything, but that is what I did in the case I cited above, and adding the additional memory did help.
