Does subscription start with purchase or can I wait a couple months to activate ?

You can wait months or even a few years to activate the subscription or at least that has been my experience. Just keep track of the email containing the activation code.

Can I use this software on one MAC IOS system, and the rest on a Windows based system with the same license for 10 systems?

Yes you should be able to use the same license on them with no problems.
