AMD rates the RX 6700 XT at "Typical Board Power (Desktop) 230 W"  In testing (under synthetic workloads) it can spike to ~321W of power draw.
Making assumptions about the power draw of the rest of your computer system they recommend a minimum of a 650W power supply.  If your system uses lower powered components (non-OC CPU & RAM, little-to-no RGB, few storage drives/usb powered peripherals) you should be able to get away with a 600W power supply.  However, if your system attempts to draw more that 600W of power through a 600W rated power supply it can trip the over-wattage protection and hard-crash your system (akin to tripping a circuit breaker, your system components will stop receiving electrical power) which can cause corruption errors.
