Well....  no...  I guess you can't turn the wifi off....  strange.  Never thought about that.

You could make the SSID not visible, turn off the DHCP scope (or limit it to a few addresses for wired connections)...  generally make it hard for people to get connected, but I don't see a way to turn it off altogether.

No, The software only offers the following modes in its UI for setup.

Wireless Router w/ AiMesh Rtr
Access Point (AP) w/ AiMesh AP
Media Bridge
Repeater Mode
AiMesh Node

If you want a good extender then I would focus on one of those, that being said. If you have a hard line to where you want to put your extender I recommend just adding an AP. Get better coverage in my opinion.

Yes you can and it works great.
I have a 5Ghz backhaul WL bridge to my detached garage for 2 IP PoE cameras (separate PoE switch wired to it in the garage) and a Homerun network 4 tuner for TV.  Also a Wl camera and a couple of other wireless devices.
It is an RT-82u (as router) to an RT-AX55(1800) and another gigabit ethernet back haul to another AX55 for better MESH coverage in the bedroom areas, but it will work just fine with identical units.  All of Asus's recent routers with few exceptions support MESH and WL uplink bridge to another.  I've had for a bit over a year and have around 35 devices and it works great. (they appeared to have an issue with one of their firmwares a while ago but the update fixed the issue)
I've been using Asus routers (at home) for many years and still have an old one repurpased that is still working great (FTP server for cameras)
