Any recommendations on adaptor that I can plug this SSD into to clone from my current 256GB SSD?

Yes, you will need a M.2 NVme cloning device. I recommend the ACASIS Dual NVme M.2 SSD Docking Station. It features an offline cloning function that can be started with a push of a button. However, you 256GB SSD has to also be NVme M.2. It will not work with a SATA drive interface. As the two formats are not compatible.
