could i plug up a headset to this for a telephone job?

I wouldn't think so unless you can plug up a headset to any other telephone. In any case you would have to either mate up the connector to the part of the telephone yo hold in your hand or cut the cable  to make the appropriate connections.

Does this phone allow for attaching a separate answering machine or is all hardwired underneath?

Yes. I have mine connected to an answering machine. The connector can be plugged into the answering machine and the answering machine connected to the incoming line. (all in series) I even have mine connected to a caller ID box.
