Question 1

This water cooler worked well in keeping my 2011 i7-3030K CPU cool with its two fan air moving process.  That version of the water cooler provided a fan connecting adapter cable that allowed two fans to connect to the CPU fan power source so the fans would change speeds with temperature variations.  This version on shows 1-fan.  Will there be the same adapter cable and the long screw lengths so the process will support a two fan solution?

Thermaltake's 3-fan offering has a radiator that is too large for I'll be able to use it.  In addition, the two fan version worked so well that I don't want to change what has been a very reliable solution.

Mine came with only one fan and I do not see any possibility that this can work with 2 fans. This is because the fan sucks the warm air via the water radiator from inside the case out. If you attach another fan, to the inside of the radiator,  that can impair the heat transfer. So I think two fans is not a good solution for this type of water cooler. There are different water cooler designs using a longer and bigger radiator, that provides space for 2 fans...  but that is by design. The heat transfer from such an unit, is probably larger than coolers using only one fan. I would prefer one of those, but my case, an Antec made one, does not provide space for 2 adjacent rear fans. And cases with two adjacent fans, usually have them installed on top of the case, and not in the back.
This water cooler is used with an AMD FX-9590 and it works very well and to my satisfaction. Hope this helps.

Question 2

Will the software for the Thermaltake Water 3.0 Extreme work with the Thermaltake Water 3.0 Performer C 120mm AIO?

In my understanding there is no software involved with this type of water cooler. It's an electro-mechanical device that is driven and controlled only by the motherboard BIOS,  via the CPU and system power electrical connectors on the motherboard. And of course by the CPU's own temperature sensor. One for the fan (the CPU) and the other one for the electric pump. No software of any kind is used.
In a similar way as an air cooler. But this is using water as a coolant, instead of air.

Question 3

I purchase this product when I built my x79 EVGA board and it has been a stellar performer for my 2011 i7-3930K.  When that cooler version arrived, it had a twin connector to a single connector adapter cable that allowed the two radiator fans to run off the CPU cooling fan connector.  Is that type of connector one of the items in this version of the water cooler package now that there is only 1-fan with this water cooler version?

No it isn't but the cooling provided should protect the CPU no matter how much overclocking you do.   I've used it on an i7-6700k and it has been smooth, more than enough.   Remember it's not an AMD processor whereby if somebody says "I've got 7 fans in my case" you can reply with "Oh, yes.   And what sort of AMD processor do you have?"  :)
