What increment in degrees do the + and - buttons add or subtract? I'm asking about being able to adjust the temp to get it as accurate as possible.

The best I can tell, the increments are 25 degrees. I haven't used the baking mode very much, but that's what I've seen.

when cooking meat should it be center rack or bottom rack? I cannot find my booklet

Whenever I'm baking/cooking anything I always put the rack on the bottom. However, I would use the broil pan with the rack on the bottom for meat. I don't eat meat, but that's how i roast vegetables. Hope this helps.

Is the temperature probe included with this oven or do you need to purchase it separately?

It's included. There's a small compartment beneath the buttons where the probe goes when you're not using it.

The inside measures about 8 inches high 12 inches across and 13 inches deep
