How can the v3 of this processor be the "replacement" when the v2 is an LGA1155 and the v3 is an LGA1150????

The v3 isn't a replacement, it is the next version. Typically Intel uses a different socket with each version, sometimes going back to older ones.

Even though it may not say, the Xeons follow the same naming structure, Sandy Bridge, Ivy Bridge, etc. and each family of processors typically uses the same socket, in this case the v3 uses LGA1150.
