Does this processor include integrated graphics?

Yes, used it in a NVR build without needing a secondary video card for video playback.  Obviously couldn't play games with it, but good enough for 30 fps viewing.

does it come with heatsink and fan?

It most certainly does. The paste is already pre-"pasted" onto the heat sink as well. Basically just assemble and lock onto the board. Pretty aggressive heat sink too, IMO. Fan is pretty decent as well.

Will this work on h81 chipset, or will the BIOS need to be updated?

Go to your motherboard manufacturer's website and check Support.  They should indicate which processors they support along with the BIOS updated needed.

server, workstation, enterprise class? whats the REAL difference? would this be a good choice for HD video editing? IF NOT WHY?

You can definitely use this for video editing....
But if you're doing this professionally.... then a Xeon E5 is a better choice. It's a lot more cores, but at a much higher price point.

is the heatsink gonna fit into 1U chassis ?

No, the stock heatsink will only fit in a 2U case or larger.  Try a Dynatron K199 [Item 9SIA1N82822678] if you going to try to squeeze into a 1U case.
