How secure is this rack?

As you can see in the pictures, it has the standard panels with a keyed deadbolt.  It will keep a casual opportunist out of it, but a person who is determined to break into it and steal the equipment out of it could do that by simply breaking the glass.  The locks on this case are really meant to keep honest people honest.  That said, it is a well built cabinet.

What kind of finish on the unit? Is it black powder coated or????
What is the recommended fan to use with this enclosure?

It does have a fairly nice black powder coated finish.

The fan use depends on what you have the rack.  I only have one managed POE switch and some other smaller devices and I'm not using a fan.

Probably not. I could not find the spec on a R610 but, the R630 is 29.72" deep. The rack you are planning to buy is 22" deep. The form factor of the front is pretty standard. Find the depth dimension of a R610 server and shop for a deep rack deep enough with a little room to spare for back cabling if any.

Does this enclosure have wheels at the bottom?

The enclosure does not include wheels, but it does have tabs that you can punch out to put wheels on the enclosure.  I just went to a big-chain hardware store and bought some casters and bolted them on and it works like a charm.

Any available options for a brush grommet on the cable tunnel entrance?

Most cabling holes are on back and rectangle shaped. Doubt you'll find a grommet to fit but you'll need to do something about the sharp tabs.
Also, front door locks but the sides have no locks. Only keeps people from reaching the front and back. Punch-out is there but you'll need to add locks to make truly secure.
