Does this work with any monitor or do I have to use my phone?

They say it can be viewed on the PC but it is not straight forward and they provide little instructions on that... (something about a virtual machine). I use my phone and can do everything I need. This is a big improvement over their Gen 1 doorbell.

Is this usable without internet?

You would need internet for the initial setup, but after that, if you had your own NVR or Blue iris setup, you could have it on your wifi and recording to those without giving it internet access. You wouldnt get any alerts on your phone or be able to talk to people when they ring the doorbell.
