Question 1

This is listed as having the following display ports: 1 Display Port, 1 HDMI, 1 VGA, 1 Serial. What I have appears to have 2 HDMI and that's it. How is this going to work with my monitor that has DVI and VGA ports?

The listing is wrong, it only has 2 display ports.  THATS IT.  You will have to buy and adaptor as most normal monitors are VGA or HDMI.  Stupid move on Lenovo's part.

Is the memory upgradable?

Yes. It has two memory slots, one of them is filled. While I don't have this exact model I have one nearly identical that is also M700 10HY. That unit supports 16gb per slot. While not specified this one should as well.
