Sometimes you can get away with using more memory than what Newegg says is the max, has anyone tried putting 16GB of ram into this device? I would like to go 16GB if possible.

Despite Intel documentation stating that the J5005 SoC supports a maximum of 8GB of system RAM, it does support 16GB using 2x8GB DIMMs.

Can you install two hard drives in this NUC?

No, it only has a 2.5-inch bay for a hard drive or SSD. Unlike some other NUCs it does not have an M.2 slot.

YES-  Any intel 500 video and up can with no problem.  Some of the lower grade can as well but i dont know off hand
