Does it have finger tracking?

Not really, it sort of tracks your index finger and thumb in conjunction with the controller.  Supposedly working on hand tracking (no controller), but haven't see much in regards to that.

I'm a little unclear on the capabilities of an all-in-one VR headset. Can this play, for example, elite dangerous?

You can play most VR games using the Oculus Link feature. It requires a cable and a VR capable computer. The computer then runs the major processing and the Quest becomes a monitor (essentially). It won't play Route Dangerous without a computer attached.

Ok, so I've never used a VR headset but love watching people play VRchat so I plan on this being my first headset. A main question is does this track my fingers? Another is how do I move, like do I walk or is there another way?

There are preliminary hand and finger tracking capabilities but it's still in a testing phase, so there aren't any games that utilizes the feature just yet.  That may change in the future.  Currently there are test apps on the Sidequest that let you play around with hand tracking.

Most games and apps allow you a variety ways of movement, but the most common is teleport.  You use your controllers to teleport to a location by pointing to where you want to go.  There's also the option to move around using the analog joystick on the controllers, but that takes some getting used to without feeling queasy.

There are certain games that allow you to move around by physically walking, but they're uncommon.  Look up Tea for God on YouTube for an example on how that works.

Bundle says comes with Vader Immortal. How do I get the game? Was not in the box.

You will have to download this from the Oculus store, use the Oculus app on your phone.

how do i get this into recording to make a video or in a stream?

Click on the record button in the pop-up menu to record. You can stream to you Facebook account with the share feature. The other alternative is to use a Chromecast and a capture device with OBS Studio. OBS has streaming capability, so you can stream to whatever URL you want.
