Can this projector be mounted on the ceiling?

Yes with any, should be any, universal projector ceiling mount. Make sure the mount can sort the projector weight. It is a lite projector compared to nice higher end projectors.

I have a fixed position of 15 feet away, ceiling mounted, that I have to install this, I'm worried it's going to be too big; can you tell me what's your screen size (& brightness) at that range please? Thanks : )

My projector is about 12 feet from my wall also wall mounted. 
It gives me an 80" or 90" picture I didn't measure. My screen goes up to a 100" diagonal. It was one of the biggest I could find.
At 15 feet the picture will be over 100" ... you can easily check the size by just turning the projector on 15 feet from your wall.
I am happy I spent the extra money and bought this model of Optoma. I enjoy the quality every day. 3500 Lumens will give you a bright picture in average room lighting but it really looks best the darker it is just like a theater.

Yes. Any wireless HDMI transmitter receiver kit will work as long as it is not 4k which I don't even believe they have at this point in time. I recommend using an HDMI cable over wireless because any wireless HDMI kit could potentially have interference problems but if you're going to buy one get a decent one and if your equipment is not line-of-sight get one that can transmit infrared signals
