Would I be able to clone my current nvme drive in motherboard (Samsung 960 evo 250gb) to a larger drive (Corsair mp510 960gb) in this enclosure and have it bootable when swapped? I want to upgrade my OS nvme then use my old one as external storage in this enclosure.

I used this device to clone my Windows 10 256GB hard drive to a 1TB hard drive. After completion of the cloning, I installed the 1 tb in the windows laptop and it has worked perfectly since then. I now use the 256gb drive in the Orico device for external storage.

Has anyone tried this device with a GEN 3 NVME drive like a Samsung 970 1TB NMVE GEN 3?

I'm using it that way and it works great.
