Can I plug servers and SANS into this switch?

Server ethernet: yes, with 1 or 10 Gbps SFP modules. But for SAN, it would only work if you’re running Fibre Channel over Ethernet (FCoE) or iSCSI (via 1 or 10 Gbps SFP Ethernet modules). I’m fairly certain it will not switch native Fibre Channel, and you won’t be able to use Fibre Channel SFP modules (typically 4, 8, and 16 Gbps) with it.

It says it is an aggregation switch, does it do bonding (or similar) or does it aggregate data like an Ethernet hub, or something else ?

Its a full 10G switch and supports aggregating up to 4 consecutive ports per bond. I use mine as a distribution switch and "aggregate" fibers from 6 IDFs and then pass that back to my core switch. Plenty of capacity and a really cost effective way to get a 10G switch or patch in a lot of fiber.
