Can this case fit a Corsair H80i v2 (with both fans)?

Yes it will. Thats exactly how I setup mine. Keep in mind though that no matter how you setup your build, the GPU will still heat up AF when you game. I setup mine with temp limit via Afterburner to avoid overheating.

Question 2

Do you have to use the PCIe extension cable with it? The reviews state it has problems. Can I just plug my GPU directly into the PCIe 3.0 x16 slot on the motherboard instead, so I don't encounter these problems?

Yes you have to use the PCIe extension cable, the way the case is designed it is required, now with that being said, I believe Phanteks realized this issue and is now sending out a more robust PCIe extension cable with it. I just received mine 2 weeks ago and it was pretty sturdy. Just don't bend it too much and you should be fine.

Will this fit a Zotac 1080 Ti AMP Extreme?

No it will not fit the zotac 1080 Ti amp extreme is a 2.5 slot card the shift and shift X can only fit a 2 slot card and even then the card  is close to the glass

What's the largest 2-slot GPU this case can handle?  I would like to install a 11.80" x 5.62" LxH GPU inside but can't tell if it would fit.

It should be able to fit, it might be a bit tight depending on what you use the bottom space though for instance bellow the gpu you at most might have about 2 inches of space left bellow and it might be a tight fit for stuff under it, and it would probably be really close if not maybe touching your psu, like it should fit but it would be a tight fit

What is the length of the PCIe extender/riser cable (total and/or just wire portion)?

The extension is just long enough for the slot to loop around to the other side of the case (about 5-6 inches?) the cable is not flexible at all and i wouldn’t recommend bending it too much.

If you're extremely experienced you could potentially fit a pump off of a 120mm rad and fan with a custom mount but it would be extraordinarily right. Shift x is made for custom loops.

how long do the CPU cooler tubes for an AIO have to be? im going to use the nzxt kraken m22 120mm

I used a Corsair cooler (which has been working great) and mounted the radiator at the bottom. I had to shape the coolant lines in the shape of a question mark and carefully press them flat to get the glass panel to close. The lines on the Corsair are about 14" long and it just about makes it. Check the Kraken and make sure you have at least this much.
