I see that this card comes with a 3x8 pin to 12VHPR adaptor, I'm wondering if it would be fine to use a 12VHPR to 2x8 pin connector that came with my PSU, which is ATX 3.0 & PCIe 5.0 Compliant?

Mine came with the 3x8, I used a 2x8, knowing my PSU would handle the wattage with just the two.  In my experience, most modern PSU's can, so you're probably fine.  If it's a right angle one, look up a picture of the plug, make sure yours is the right direction,

Pretty straight forward install like any other GeForce RTX cards, just make sure you wipe off the old driver if it's an AMD Radeon GPU, and update the Nvidia driver once you have this card physically installed and booted up.

Should be adequate for standard usage, doesn't have the best cooling compared to more expensive models, but it's fine for the most part.

How does this VGA card perform when overclocked?

Since this is a non-OC version, it may not be binned to have high overclock headroom, but if you can get it overclocked substantially and keep it stable, it should be just like any other OC cards. The only caveat is that it may run hotter than average due to the fans and cooling design not being of the most premium that ASUS has to offer. Also the fact that this card is a smaller form factor design so heat throttling is a possibility if you increase wattage/voltage a good deal to reach your desired overclock.
